Blue Corn Harvest Bar & Grill, a restaurant known for its authentic Southwestern cuisine, will expand into the Round Rock market in November with a location anchoring the first phase of the Diamond 79 commercial development at 2980 Joe DiMaggio Blvd. Founded in Cedar Park in 2012 by co-owners Carlos Manzano and Santos Garcia, the restaurant also has locations in Leander and Georgetown. Color Coated Nails Bar & Spa will open in a 1,530-square-foot space in the new Diamond 79 Plaza retail development under construction at 2980 Joe DiMaggio Blvd., Round Rock. A prospective opening date for the salon and spa is not yet available, listing agent Frances Crossley said.


A third Round Rock location of Dutch Bros. Coffee at 2630 S. A.W. Grimes Blvd., Round Rock, is scheduled to open this spring, although a specific opening date has not been set, according to a company representative. The Dutch Bros. menu includes specialty drinks, such as German chocolate mochas, Dutch sodas and smoothies. Georgia-based Tropical Smoothie Cafe will open in a 1,684-square-foot space in the new Diamond 79 development located at 2980 Joe DiMaggio Blvd., Round Rock.
