With Lima Criolla Peruvian Restaurant's latest kitchen remodel, it can now offer a staple Peruvian dish.

The impact

The North Austin restaurant expanded its kitchen in late November to move in a new oven for cooking pollo a la brasa, or Peruvian rotisserie chicken.

Owner and general manager Susana Vivanco said the expansion “completes” the Peruvian cultural offerings at Lima Criolla. The restaurant serves other Peruvian and Latin American food such as anticuchos, carapulcra and papa rellena.
