
The “signature” in the name of LouLou’s Beignets’ Signature Louisiana-Style Café au Lait comes from the chicory-dripped coffee the cafe uses to brew the drink.
“We wanted to bring a traditional Louisiana feel to the Houston [area] market,” General Manager Travis Brinkman said. “Louisiana is known traditionally for their cafe au laits and chicory coffee.”
The cafe au lait—French for “coffee with milk”—is made with milk steamed to 152 degrees and chicory-dripped coffee, in equal parts. It can be made to suit people’s diets.
The store uses dark roast beans from an Italian company, Segafredo, that sources its beans from Kenya.
It is traditional to order a cafe au lait with beignets, Brinkman said.
“The flavor of the steamed milk and chicory coffee pair well with the powdered sugar topping on the beignet,” he said.
