Bob Wilson, the owner of Billy’s Ice House in New Braunfels, jumped at the opportunity to purchase Adobe Verde because he felt it is a staple of the community.
According to Wilson, many popular menu items will remain the same alongside new additions. The rustic atmosphere of the restaurant, which resides in a historic cotton gin that is around 130 years old, will be maintained.
“The food obviously is going to be great,” Wilson said. “We've had a lot of requests to keep a lot of things on the menu like the frog dip, and that's not going anywhere.”
The restaurant will begin serving breakfast items, and an outdoor bar will be added that will allow customers to purchase food and drinks to go easily.
“One of the things that we really are going to focus on is the level of service that we're going to get back to providing at Adobe Verde,” Wilson said. “We're not going to compromise on the services that our customers are going to get.”
There will be a designated area for kids to play yard games such as cornhole, but a playground structure will not be put in due to the potential liability. Some of the long-term improvements Adobe Verde may see in the future include an expansion to the restaurant’s party room and reconfiguring indoor seating, Wilson said.
The previous owners of the restaurant made the decision to sell Adobe Verde due to no longer having the necessary time to put into the business but have been helpful and supportive during the change of ownership, Wilson said.
“We want to make this a really positive, fun environment, which, to my memory, that's always what Adobe Verde was, just a light and relaxed atmosphere,” Wilson said. “The food was good, and just everybody had a good time there. So that's our goal at the end of the day.”
