After participating in events such as Taste of Cedar Park and luncheons hosted by the Cedar Park Chamber of Commerce, Big Cat BBQ owner James Jones said he has had so much customer demand he needs a bigger barbecue pit and extended hours.


In mid-December, Jones decided to expand business hours to seven days per week. Jones said the local dinner crowd attracted more customers than anticipated, and in February, Jones hopes to purchase a new barbecue pit to accommodate twice the amount of meat his current pit can make at a time.


“We just had so much demand at night,” Jones said. “People want us, and so we’re trying to figure out as many ways to stay open [later].”


The new pit will be able to make 850 pounds of barbecue at a time, or 1,200 pounds per day, which will also allow for additional catering opportunities, he said.
