After Pierre and Olivia Leitgib sold their small pharmaceutical company in Switzerland, they set off on an adventure sailing around the world. Four years later they opened Paris in a Bite, a French bakery and specialty food shop just off Westlake Drive and Capital of Texas Highway. “Macarons,” Pierre said when asked what made them want to open their own shop. “Seriously.” “We were on a remote island next to Bora Bora, and there was a lady selling macarons,” he said. “She was doing well, and we thought, ‘That’s something we should try.’” Paris in a Bite has been open since March 8 and specializes in French pastries and products such as foie gras, caviar and fine Bordeaux wines. Pierre said he and his wife seek out the best producers for the best products, adding that it can be a difficult process. “The foie gras, for example, nobody sells it here,” he said. “And if you can’t find a distributor then you have to set up the whole supply chain from A to Z. That’s hard.” The brightly colored specialty chocolates the shop stocks are also tricky to source because they’re made by a Swiss chocolatier with only three other shops, all in his home country, Pierre said, adding that it is worth it because nobody else does it. The owners say they take pride in the quality of the products they are able to import. Pierre said the staff sampled macarons from at least 20 different suppliers before settling on the perfect cookie, which the shop now offers in 18 different flavors. “The reviews say ‘best macaron in town,’” He said. “That’s a very consistent feedback we get from people, and I’m inclined to agree.” Paris in a Bite stocks a variety of specialty products, and many pastries are baked in-house every day. Paris in a Bite also hosts a number of events, from wine tastings to club meetings.
