Quail, wild boar, duck and antelope are staples on the menu of new food truck Lo Salvaje. The truck is located at the Desert Door Distillery at 211 Darden Hill Road in Driftwood.

Lo Salvaje opens to the public April 19 and will feature a special Wild Card Dinner, according to a press release. For $14, diners can try a wild boar burger and be entered to win a $100 bar tab at the Desert Door distillery.

The burger features a spiced boar patty with mayocoba beans, onion, bacon, sauce especial and jalapeno salsa on a potato roll.

The distillery also will be serving specialty cocktails, of which $2 per cocktail will be donated to the National Parks Conservation Association.

Lo Salvaje was dreamed up by chef Jesse Griffiths of Dai Due and Josh Crumpton of Spoke Hollow Outfitters, the two are longtime friends who share a love of hunting and eating wild game. Stephanie Stackhouse is the chef at Lo Salvaje; she previously worked with Griffiths at Dai Due, according to the release.
