Meet the chef
Georgetown local Manikiran Karaka is the owner and head chef behind Raa Mawa Desi Fusion, which opened in December 2023.
Karaka was inspired by his family’s business in India and the food he grew up with.
“When I was a kid, we used to eat a lot of street food outside,” Karakan said. “Most Indian people, they like to have street [food].”
What’s on the menu
Karaka traveled across different Indian states in his childhood, trying many styles of street food. He curated the menu to include dishes from north and south India alike. This includes northern-style chaats, and dosas, which are southern-style savory crepes.
“My favorite [is] chole bhature,” Karakan said, talking about a popular north Indian dish of deep-fried puffed bread and chickpea curry. “Usually, I make it every day. Even most of our customers love that.”
The food truck also offers traditional Indian refreshments, such as mango lassi, which is a sweet yogurt drink, and desserts like gulab jamun, made of milk cheese balls in an aromatic syrup.
The features
Raa Mawa provides catering services, including customizable menu options and a dosa station where the team makes dosas to order with the individual’s choice of filling.
Additionally, the South Fork Fun, Food & Brew park includes a bar, covered seating, picnic tables and a playground.
What’s in a name
When Karaka was brainstorming a name for the truck, he wanted to come up with something funny. He eventually landed on “Raa Mawa,” which is a casual, friendly greeting in Telugu slang.
Stay tuned
The Raa Mawa team is opening a brick-and-mortar restaurant near its current location. In addition to serving made-to-order dishes, the new location will also operate as a meat and grocery store. Karaka plans to open early next year.
