Faith Thomas has history with the custard shop located near the intersection of I-35 and Williams Drive. She worked there in high school—as did her three siblings—and came back in 2017 as a manager. Two years later, she bought the business when it was a previous franchise and rebranded it as Frozen Flamingo in 2021.

“I could tell [the business] needed someone who could dedicate their whole life to it,” Thomas said. “I was 22, and I told the owner, ‘Whenever you’re ready to let go, I want to be your first phone call.’”

On the menu

Frozen Flamingo offers three categories of desserts: frozen custard, shaved ice and frozen cocktails.

Thomas said because it’s the custard—a thicker and creamier product than ice cream—that sets the business apart, she likes to incorporate it in Frozen Flamingo’s other treats by adding a scoop to a cocktail or putting the cream base in shaved ice.


Additionally, the menu is customizable, Thomas said. Customers can mix and match flavors or add-ins, and custard can always be taken out for those who eat a dairy-free diet.

“As a consumer, I love going to places where a group of people can all be satisfied, so that is what I was trying to do here,” Thomas said.

Looking ahead

Thomas said social media has helped market and bring new customers to Frozen Flamingo. On her personal accounts, she often posts about a day in the life of a business owner and point-of-view videos of making orders.


“People drive from all over Texas to come say hello,” she said. “They’re driving past other custard shops like Freddy’s and Culver’s, and they’re coming here because they like to have a face with the business. It’s more personal than going to a chain.”

In the near future, Thomas said she hopes to open other businesses and expand the Frozen Flamingo brand down the line as well.

“I want to do all things hospitality—restaurants, bars, boutique hotels,” she said. “I love people, and I love hosting people.”
