Nori, a plant-based Japanese restaurant, opened at 3208 Guadalupe St., Ste. B, Austin, on Aug. 4. Nori has an entirely vegan menu with vegetable-based nigiri, rolls, and main entrees such as eggplant katsu and ginger miso ramen. It also serves appetizers such as blistered shishito peppers, beet fries and kimchi. Nori is serving a soft-opening menu with limited items but is planning on expanding the menu to include more rolls, gyozas, cocktails and mocktails next month.
