In a nutshell
Cavazos closed the eatery's location on the Community Gardens property in April after he said someone stole the electric cables from the truck.
"It happened sometime between [April 16-17] and unfortunately all of our food had to be tossed once we found out about it," Cavazos posted to social media, announcing his temporary closure just three months after moving it to Bastrop form Austin.
What's happening
Cavazos told Community Impact that he plans to reopen sometime in September at a new location; however, he has not yet decided where.
"We are still looking for the right spot," Cavazos said.
What's on the menu?
Specializing in tacos, Cavazos said his favorite is the chimichurri mollejas taco.
"It is an explosion of textures and flavors unlike many other things," Cavazos said.
Other menu items include tacos made with steak and bone marrow, nopalitos quesadillas, and more. Sides include charro beans, Mexican potatoes, queso and other options.
Meet the owner
Cavazos grew up in Rio Bravo, Tamaulipas, Mexico—less than half an hour from Progresso, Texas. After moving to Texas, and eventually Austin, he started a Northern Mexican food concept. In January, he moved Taxolote to Bastrop after visiting the area.
"I felt a sense of community and belonging here that not many other cities have," Cavazos said. "I loved the idea of being part of this community and getting to know everyone while introducing them to this type of food."
Cavazos said his goal is to use his experience growing up in Mexico, combined with his own spin, to create unique flavor profiles for his dishes.
