Old Coyote Cafe, a locally sourced, all-organic taco truck, debuts at its permanent spot in Cedar Creek on Aug. 9.

Owners Roland Barrera and Dan Mages—both locals—built the eatery out of a 31-foot Airstream travel trailer, decorated with lights and flags.

What's on the menu

The farm-to-table, grab-and-go breakfast taco concept uses ingredients such as non-GMO, grass-fed brisket; Oaxaca smoked queso; beef chorizo; nopales; and farm-fresh eggs.

"Everything down to the salt and pepper is organic, no seed oils," Mages said. "If we don't grow it ourselves, it is locally sourced—including the longhorn cattle which is from a ranch across the street, right here in Cedar Creek."




Daily drink options include freshly pressed juices and aguas frescas using elements from their garden, in addition to organic coffees and teas. On Fridays through Sundays, Mages said they will offer organic beer and wine options, as well as birria and barbacoa empanadas, which can be enjoyed while listening to live music on their outdoor stage.

What else?

The Old Coyote Cafe team will throw a grand opening party on Aug. 30, with live music by Texas Country and Honky-Tonk band Armadillo Road.

"We are just super excited to finally be able to share this with the community," Mages said. "We’ve been getting honks from people driving by while we were building it, and we can't wait to share these truly amazing tacos with everyone."

Old Coyote Cafe is the first of several projects the pair have in store for Cedar Creek.

Mages said in early 2025, they will open an old-world-style, 48-hour-fermented sourdough pizza spot.

"Everything will be made from scratch using ingredients like tomatoes and basil from our garden, cooked in a wood-fired brick oven," Mages said. "We want to put on full display the taste difference and distinction of real food grown on-site, healthy food, quality food, food that will bring you back, time and time again."
