The retailer will be located within the soon-to-come Burleson Crossing East, which will span 20 acres adjacent to Burleson Crossing at the northeast corner of Hwy. 71 and Edward Burleson Drive. Kohl's offers a range of products including clothing, accessories, beauty and more.

Sprouts Farmers Market


The specialty grocery retailer will also be located in Burleson Crossing East near the upcoming Kohl’s Bastrop. According to a permit filed on Jan. 28 with the Texas Department of Licensing and Regulation, the Sprouts Farmers Market team will begin construction on the 23,349-square-foot store in March, with an anticipated one-year completion. Sprouts Farmers Market offers a variety of fresh produce, meat and seafood, as well as bulk products, vitamins and supplements, according to the website.

Jersey Mike’s Subs

The fast-casual sandwich shop will offer nearly 30 hot and cold options including vegetarian and gluten-free choices. The East-Coast-style sub shop will be opened by franchise owner Michael Jordan, and is the first eatery to announce it is coming to the 65-acre Pearl River development currently underway.

Chuy’s offers "Texas-sized plates that won't break the bank," featuring traditional Tex-Mex options like fajitas, tacos, enchiladas and burritos. Other options include a range of margaritas, eight signature sauces, and house specialties. Representatives said they are working to find the perfect spot to open in Bastrop.

Jeremiah’s Italian Ice

Local couple Jack and Aly Plimpton will offer dozens of flavors for their housemade Italian ice, ice cream and the brand’s “jelati”—a combination of the two. Jack Plimpton said the shop will feature a fun atmosphere with indoor and outdoor seating, as well as walk-up windows.

Originally set to open last fall, Chipotle spokesperson Annie Gradinger said Chipotle Mexican Grill will debut its first Bastrop spot later this year in Burleson Crossing. Chipotle offers create-your-own, Mexican-inspired food including burritos, tacos, salads, bowls, quesadillas and more.
