Radius Butcher & Grocery will replace Salt & Time Butcher Shop and Restaurant, offering products from Texas farms.
Salt & Time will close July 6, and Radius is slated to open later this year.
What’s happening
Radius officials will source food from some of the same farms Salt & Time does, but won't include a restaurant in-store. Instead, Radius will also be a grocer, offering produce, grains, eggs, cheeses and seafood.
“We are excited to pass the baton to Radius Butcher & Grocery, who share our commitment to sustainable practices and quality craftsmanship,” Salt & Time owner Ben Runkle said in a news release.
Radius will be led by founder Kevin Fishner and head butcher Joe Saenz.
Salt & Time was slated to be part of failed public market concept, the St. Elmo Public Market. Runkle said Salt & Time was one of the last businesses to remain tied to the market.
The developer of the project, Maker Bros., quietly listed the project for $22.5 million in July 2022, and announced it sold in November 2023 to become a bowling alley and arcade concept from an Ohio-based company.

“Radius is the grocery store we wish we could go to,” Saenz said in a news release. “We want to walk into the store and know that all products are of the highest integrity and good for the body. We want a small store with fresh products, not a massive warehouse of commodity nonperishables.”
