A new food truck is now serving smoked meats, homemade sausages and Southern-style sides on Manor Road.
The overview
Parish Barbecue opened in the backyard of Batch Craft Beer & Kolaches on March 28. The food truck is owned by pitmaster Holden Fulco, a previous manager of Interstellar BBQ who spent seven years at Franklin Barbecue and helped open Pinkerton’s Barbecue in downtown San Antonio.
On the menu
Parish Barbecue blends flavors from Texas and Louisiana cooking with locally sourced meats, fresh produce and beverages, according to a news release.
The menu includes Texas staples like USDA Prime Black Angus brisket, pork ribs and house-cured ham, as well as creative offerings like pulled duck with crispy cracklins.
The menu’s Louisiana influence includes sides such as Acadiana potato salad, crawfish cornbread dressing and desserts like pecan pie brownies.
According to the news release, Parish Barbecue will also offer options for guests who do not eat meat.
