As a child, Salt Lick BBQ owner Scott Roberts would sit under his grandmother Roxie's kitchen table and eat scraps as his family cooked. Roberts said Roxie was recognized as one of the best cooks in Hays County, and that everybody wanted an invitation to eat at her house after church.
The Southern comfort eatery, named after Roberts' grandmother, honors her legacy of home cooking in Hays County.
Roberts opened Roxie's in February, with the interior decoration inspired by her home. The team even built a facade modeled after her house around the restaurant's kitchen.
"I was trying to recreate that experience of going to her house and having a meal," Roberts said.
What's on the menu
The menu at Roxie's features a variety of starters, sandwiches and entrees, from deviled eggs to fried chicken.

For those interested in a family-style meal, Roxie’s offers “The Experience,” which is designed for sharing. Guests can select entrees such as chicken-fried steak, baked chicken, and pork chops with unlimited refills of Southern-style sides like mashed potatoes and creamed corn.
The restaurant team also serves desserts like key lime pie, as well as craft cocktails.

"One of the best memories I have [at Roxie's] is the first batch of biscuits that came out of the oven and they were correct," Roberts said. "They had risen up, they were the perfect color ... it was all there ... she did not write any of the recipes down, so we spent a long time perfecting them."

Roberts said they plan to have a celebration at Roxie's in October to commemorate the anniversary of perfecting his grandmother's biscuit recipe.
