Wanting to spread Czech cuisine with Texas flair in Central Texas, Dos Gatos Kolache Bakery Co-Owner Chase Katz said he had been eyeing expansion for the past couple of years.

Now, the San Marcos-based kolache bakery has opened its third overall location at 1164 FM 306 in New Braunfels.

“This will be your favorite local coffee shop,” Katz said. “There’s so much to love about being here in New Braunfels.”

Dos Gatos opened its first location in San Marcos in 2009. Katz said the concept aimed to fill a specific niche in the region.

“I felt something like this was missing in the area,” he said.


So Katz partnered up with his brother, Seth, to open a new business. After taking over a recently closed kolache bakery in town, Katz said the idea of a coffee shop with a unique twist was born.

The New Braunfels location has kept the same menu as its sister locations in San Marcos—but it has an entirely different layout. Aiming for fast service and quality product, Katz said the new spot features a drive-thru and walk-up window.

“We’re trying to make this a quick daily option for people in New Braunfels,” Katz said.

The kolache bakery also sources its ingredients from local producers. The bakery gets its honey from beekeepers in Austin and its pecans from a pecan farmer in Lockhart.

On the menu


Katz said the bakery serves classic, sweet Czech-style kolaches along with savory Texas options filled with meats and cheeses.

The sausage, cheese and jalapeño kolache is a customer favorite, Katz said, and the strawberry and cream cheese kolaches are popular as well.

Additional meat options include Polish sausage, ham and bacon, along with vegetarian sausage patties. Fruits like raspberries, strawberries and prunes top off the sweet kolache roundup, Katz said. Dos Gatos Kolache Bakery also sells cinnamon rolls and loaves of bread.

Other than food, the bakery also features a full espresso bar which has traditional iced and hot options.


From mochas and chai lattes to frappes and cappuccinos, Katz said there is no shortage of caffeine at the new location.

“We’ll also have those fresh smoothies with freshly squeezed fruits,” Katz said.

More non-coffee options include hot chocolate, iced and hot teas and fresh orange juice.
