What began as a way to provide a special diet for Anita Sandoval and Gerry Sandoval’s daughter has become a mission for the Sandovals to provide healthy super food options for their community.

How it started

In 2020, Anita and Gerry’s daughter Olivia was diagnosed with alopecia at 4 years old.

As an alternative to frozen treats, Anita Sandoval said she practiced making her own acai bowls at home. With positive reception from her family and friends, their food truck business came to fruition in 2022 after moving to New Braunfels from Canyon.

“I had to learn how to make healthier sweets for her because I didn’t like taking away candy and ice cream [from her diet],” Anita Sandoval said.


The Sandovals said their family adopted a healthy lifestyle along with their daughter to not exclude her. They began to see Olivia’s health improve along with the regrowth of her hair, which inspired them to share about the health benefits acai berries offer.

“It was never so much about starting a business for the money,” Gerry Sandoval expressed. “It was to be in service ... and educate others on the health benefits of acai [superfoods] that we experienced.”

Respecting the craft

A customer favorite is the original acai bowl, which is blended acai berries, bananas, strawberries and blueberries as the base is and topped with organic chocolate hazelnut granola, raw honey, housemade chocolate peanut butter, banana, strawberries and blueberries.


Other bowls featured on the menu are the Brazilian acai bowl, pink pitaya bowl, pina colada bowl and chia pudding parfait, among others. The menu also offers smoothies, protein balls, avocado and fruit toast options.

Anita Sandoval said everything is blended from scratch to remain as healthy as possible and makes housemade chocolate peanut butter and chocolate almond butter.

What’s next

Fruition Fruit Blendz recently added a second food truck in New Braunfels.


The Sandovals said they are working on adding fresh pressed juices, wellness juice shots and Dubai chocolate-inspired items by the end of the year.

“Since we moved here, we’ve had such positive feedback from the community,” Anita Sandoval said. “We’re happy to be able to provide a healthy food option in our area.”
