Scooter’s Coffee in Boerne moves forward following the first reading of a Special Use Permit, or SUP, on Oct. 27.

The permit would allow for an accessory drive-thru for the business.

The coffee shop will be located off I-10 near Scenic Loop Road and Cascade Caverns Road.

According to the meeting agenda, the development will be a drive-thru coffee shop with no indoor seating planned to accommodate 14 cars and have an escape lane. The building will have a walk-up window.


The Boerne location will be owned by Shaughnessy and Andrew Davis, who own the Scooter’s Coffee in Kerrville.

During the meeting, Andrew Davis said the store will be fully staffed at peak hours to help alleviate any potential drive-thru congestion.

City Council added a stipulation to the SUP requiring the store to have rainwater or HVAC recapture, with the preference to include both systems. Store owners agreed to look into recapture as part of the permit approval.

Council member Ty Wolosin supported the development, saying it would add to the I-10 area.


“I think it is a great utilization of an unused space,” Wolosin said.

The SUP will require a second reading for final approval before the project can move forward.
