Trevor Airola opened Rocky Mountain Crepes when he was just 18 years old.
The inspiration
After graduating from Canyon High School, he moved to Colorado, where he learned the art of crepe making. Not too long after, he moved back to New Braunfels and with the help of other local business owners, began his food truck venture.
Airola and his family used recycled materials from a pre-Civil War home and an old Tennessee railroad company to construct the exterior of the Rocky Mountain Crepes food truck, making it a permanent installation on the corner of New Braunfels Street and Hunter Road. He said his and his wife's families played a significant role in the business's development.
“I’m not sure it would be possible without the support of them,” Airola said.

He said he saw a lack of quick food options in Gruene, which is what inspired him to open a business where people visiting the area could pop by and quickly grab a bite to eat.
“We are the only fast service food in Gruene and really, that's our biggest advantage,” Airola said. “We're able to offer the frozen Red Bulls, the fresh crepes and you can have them out in a few minutes.”

The business also serves shaved ice, coffee and espresso beverages, frozen tea and Red Bulls and soda options.
Airola said they are also creating a crepe mix so customers can bring the rocky mountain delicacy home with them. The mix will be available at local grocery stores and other Rocky Mountain Crepes locations.
What's new
Rocky Mountain Crepes will have a truck at the Comal County Fair & Rodeo and Wurstfest for the first time this year. The business also began operating a mobile truck for catering and events in September. Airola said he hopes they can travel to more events and provide more catering services in the future.
