Delgado said she wanted patrons to experience Peruvian culture as food is a big part of it.

“I think that a lot of memories are made while you eat,” she said.

Along with the food, the restaurant’s environment is true to Peru, Delgado said.

Diners are greeted with Peruvian music and the decor features red and white flowers to match the colors of the Peruvian flag. Art in the restaurant features Peruvian natives.

Even part of the restaurant’s logo features a cultural symbol of Peru, the Nazca Lines in southern Peru, ancient designs that have not been eroded.

Delgado said Peruvian food is handled with care, proper preparation and presentation.

“If you don’t wait for the smoke to go and you put the seasoning before that, then it’s not going to taste the same,” Delgado said. “It’s just the perfect timing of all the seasonings going together that makes it good.”
