Birria & Chips, located at 18535 FM 1488, Ste. 150, opened May 29 in Magnolia. Co-owner Ashley Reyes said the restaurant offers a wide variety of Mexican dishes but specializes in birria.

"[Birria] is a traditional Mexican beef stew that is cooked for hours, with many spices," she said. "The flavorful taste of birria can be made into tacos, quesadillas, enchiladas and much more. We also offer "antojitos"—which translates to "cravings"—consisting of elote, esquite, crazy hot Cheetos and more. We also proudly offer Tex-Mex."

Reyes, along with her husband, Javier Gonzalez Rios, and his brother, Odilon Gonzalez Rios, have worked in the restaurant industry for years. Reyes said they decided to take the leap together to create the family-run business in Magnolia.

"Magnolia is so dear to us," she said. "We all live in the area, and I actually grew up in Magnolia, went to school in Magnolia and graduated from [Magnolia] West in 2016. So when the opportunity presented itself, it was a no-brainer for us. We are excited to offer Magnolia a distinct Mexican cuisine."
