"I’m from this community. I love it so much, and I knew what was needed,” Rodriguez said.
Rodriquez said her restaurant provides patrons a spot to eat that is not miles out of town. Without this location, residents in the area have to drive 10-15 minutes to eat at a restaurant, she said. Rodriguez said since Lone Star Cheladas opened in 2020, residents are happy they have something close.
Rodriguez said she loves making her customers happy. She said she, her husband Ramiro and their son try to give customers something they enjoy eating. One of those things is Mary’s Spicy Shrimp, a family recipe she and her husband make together.
“I wanted the customers to taste something that I love,” Rodriguez said.
She said she perfected the recipe after making it 20 times because there was always something missing. It is a secret recipe that few people know and always leaves the customers wishing they had ordered the pound instead of a half-pound, she said.
Lone Star Cheladas offers tacos; quesadillas; fish; wings; and a variety of beverages, such as cheladas, beer, daiquiris and Mexican Coca-Cola. Rodriguez said the eatery is also trying out new items, including burgers and crawfish, to see if they will become permanent additions to the menu.
The Rodriguez family loves feeding the community and even did so during the winter storm in 2021, she said. Rodriguez said because the restaurant’s grill and stove are gas, the family was cooking for themselves despite not having any electricity. She said nearby residents saw cars in the lot and came in asking if Lone Star Cheladas was open. She said they did not turn anyone away.
In addition, Rodriguez said she has struggled to find employees for the restaurant.
“We overcome everything that comes our way,” she said.
