Patricia Pantazopoulos, the owner of Anonymous Artisan Bites & Coffee Bar, said she cooks with her mood. Each day, she makes a different Greek dish to serve for lunch in the Sugar Land cafe she runs with her husband, Tasos. Some of the dishes she offers include moussaka, a casserole that consists of eggplant, meat and tomatoes, and pastitsio, a baked pasta.


While she likes to keep her cooking spontaneous, Patricia said she usually makes meatballs every Monday, something her customers have come to request since the couple opened the cafe April 1, 2016.


“I don’t like schedules, but the customers are making me do that,” she said.


Patricia said the thing she enjoys most about cooking is the creativity it calls for and the ability food has to bring a smile to a person’s face.


Patricia learned to cook working in her parents’ restaurant, Vasos Bar-B-Q, located next door to Anonymous. While vacationing in Greece in the early 2000s, Patricia met Tasos, who was born and raised there. The couple lived in Greece for 10 years after getting married, she said, and during that time, Patricia had her own cooking show that was broadcast to a number of countries, although it never aired in the U.S.


While Patricia handles the menu, Tasos is the baristo at Anonymous, where he serves dark roast Lavazza coffee in his espresso drinks and brewed coffees.


The most popular iced coffee drink at Anonymous is the Freddo cappuccino, while the most popular hot coffee drink is the caramel macchiato, a mix of espresso, caramel, vanilla and milk, Tasos said.


While Anonymous was recently named best bakery in Texas by entertainment website BuzzFeed, Patricia said she has always done more cooking than baking.


“I’m still experimenting with the baking part,” she said.
