House of Roux celebrated its grand opening May 15 at 317 Gentry St., Spring. Located in Old Town Spring, the new cafe offers traditional Cajun cuisine for lunch and dinner with menu items ranging from boudin balls and boudin egg rolls to chicken and sausage gumbo and gumbo pot pie—a House of Roux original. Owned by Abbey Hebert and Cody Nicholson, House of Roux's dishes are inspired by the flavors found in Hebert's hometown in Louisiana's Acadia Parish. www.houseofroux.com
