El Rancho opened Aug. 11 at 20420 I-69. The Mexican restaurant serves traditional dishes including chicken and beef fajitas and enchiladas. One of its specialties is the chile relleno, a deep-fried poblano pepper with Monterey Jack cheese and El Rancho’s ranchera sauce served with rice, refried beans and tortillas.
