What we know
Hypsi will be run by Chef Terrence Gallivan, a two-time James Beard Award nominee in Houston. His former restaurants include The Pass & Provisions, a rustic eatery from 2019 that specialized in New American cuisine before its closure, and Elro, a pizza restaurant in Montrose that closed in 2024.
“I’m honored to introduce Hypsi to the Heights and to be part of Hotel Daphne’s opening chapter," Gallivan said in a news release. "This is an incredible opportunity to cook for a city I love in a neighborhood with such a unique story, and my hope is that Hypsi becomes a place where locals and visitors alike will return time and time again—whether to celebrate one of life’s special moments, to simply enjoy a thoughtfully prepared meal, or to linger over cocktails and conversation with loved ones.”

Meanwhile, the beverage menu will showcase Italian wines and spritzes, including an Italian-style aperitivo.

Opening in November with the dinner menu, Hypsi will be the first aspect of Hotel Daphne to open to the public. Per the release, the restaurant will open for breakfast and lunch in the future. The hotel will follow later, opening in the winter, with room reservations opening for stays in January.

Bunkhouse hotels also owns Hotel Saint Augustine, the group's first Houston concept that opened in late 2024 in the Montrose area.
