Nathalie Annequin, a French native, said Paulette Cafe was named after her mother. The cafe opened in December 2023 and offers authentic French cuisine.

“Some of Paulette Cafe’s recipes were my mother’s recipes,” Annequin said. “We offer French cuisine made the French way, from scratch with fresh ingredients, not frozen.”

The inspiration

Annequin’s business venture began in 1999 in France where she owned three restaurants with different concepts including an evening entertainment restaurant, an event restaurant for large events such as weddings and a pastry shop.

After visiting Downtown Conroe 23 years later, Annequin decided it was the ideal place for her next restaurant, Paulette Cafe.


At Paulette Cafe, Annequin said customers are transported from Conroe to France with the French theme, French cuisine and a staff consisting of her husband and daughter-in-law who are all French and often speak French amongst each other.

“I fear customers will be thrown off by our language sometimes but they typically tell me they love the language and enjoy listening to us [converse] with each other,” Annequin said.

Craving French food?

Annequin said Paulette Cafe is famous for its croque madame, a warm sandwich made with Texas toast, ham, melted cheese, topped with an egg and served with a spring mix salad.

“People love it, some people only come for the croque madame,” she said. “They try it once and are hooked.”


Paulette Cafe is also known for its savory and sweet crepes as well as its French pizza made with French dough and other French ingredients including mozzarella, spinach, burrata and prosciutto.

Going forward, Annequin said Paulette Cafe will soon be offering onsite catering and plans to expand with a new location within the next six to eight months.

“I just want to thank all my customers because I don’t always have the time to thank them for visiting,” Annequin said.
