With over 10 years of experience in the baking industry, Allyson Gray brought Dough Baby Bakeshop to Montgomery last April.

“I have loved baking since I was little, and I always wanted to open a bakery,” Gray said.

Meet the chef

Although Gray said she did not study culinary arts in college, she earned a business administration degree to fulfill her dream of owning her own bakery.

Gray's baking experience comes from her time as a culinary arts student in high school as well as her time learning through trial and error from recipes found on YouTube and the internet. Gray also spent time working for several bakeries during her time in college.


With her mind set on opening a bakery, Gray spent her high school years planning her future bakery’s name as well as baked goods recipes.

“I've been planning this thing for a long time,” Gray said.

On the menu

Dough Baby Bakeshop offers a variety of fresh baked pastries with gluten-free options as well as breakfast and lunch options.


Its bakery menu is made of a variety of cookie and cupcake flavors as well as cakes. Other baked goods include lemon squares, brownies, banana pudding, iced sugar cookies, Texas sheet cake and cinnamon rolls.

“We have these Texas-sized cinnamon rolls that are super good,” Gray said.

The Texas-sized cinnamon rolls are made with buttercream rather than a glaze. Gray said she prefers the buttercream because unlike a glaze, the buttercream sticks on the cinnamon rolls.

“The buttercream is honestly really popular,” Gray said, adding that several customers have returned requesting it.


Along with fresh baked pastries made every morning, Gray said some popular breakfast and lunch options include chicken salad, croissants, breakfast tacos and “Jacked Up Grilled Cheese,” made with bacon, tomato, spinach, mayo and pepper jack on grilled sourdough.

Dough Baby Bakeshop also offers cupcake decorating classes and hosts events upon request.
