Remembering the craft
Tony's first opened in 1965 and has been a mainstay for Italian fine dining inspired by Naples and influenced by Milan. To celebrate its 60th anniversary, Tony's will be offering a special menu all of April featuring a line-up of the late owner and restaurateur, Tony Vallone's favorite dishes, dishes he served to friends, family, socialites, world leaders and even United States' presidents, according to the news release
"We are not a brand that sits on the years padded beneath us, we are very much a living, breathing thing," Executive Chef and Partner Kate McLean said in the news release. "It is my great opportunity and honor to lead us through this next phase."
The special menu includes nostalgic dishes such as:
- Duck liver pâté: Finished with cognac for a rich and velvety texture. Once served automatically at every table, it's now available upon request
- Caviar potato: Inspired by Tony's annual birthday gift to his wife, Donna, is an Idaho potato filled with butter-whipped mashed potatoes crowned with one ounce of caviar
- Prime ribeye Fiorentina: A ribeye marinated in olive oil, dried rosemary, parsley, salt, crushed garlic and red wine vinegar before being grilled
- Strawberry cassata cake: A light, airy and layered angel food cake paired with sweetened whipped ricotta and finished with fresh strawberries.

"I watched Tony through the years and Tony's was his jewel, it was his life," she said. "He tended to it like it was a family member, and I think that’s why it thrived and succeeded for so many years. I believe that our staff under the continued leadership of Executive Chef Kate McLean has done wonderfully in making fine dining fun."
