Brothers Surpreet and Preet Paul Singh teamed up with Michelin Plate honoree and chef Jassi Bindra, who is spearheading Pok Pok Po's daily operations, to create the concept. The group aims to draw on Houston's "eclectic" and diverse food culture, per the release.
“At Pok Pok Po, we’re creating something that’s not just a meal but an experience," Bindra said in a statement. "We’ve taken everything people love about fried chicken and given it a twist with bold, gluten-free recipes and flavors that truly speak to the diversity of Houston."
The features

The quick-service restaurant will have a 55-seat dining space and utilize a blend of white and light wood tones, subtle pops of color and greenery to exude warmth and invite guests to a welcoming parlor environment.
Wooden tables and chairs are complemented by custom banquettes along the walls, while black-and-white themed seating will provide a connection to the restaurant's sister concept, Bol—also opening before the end of the year, per the release.

This includes Indian Kashmiri red chili powder, and gluten-free flour and starch batter to prepare the restaurant's signature chicken sandwich, fried chicken strips, loaded chic fries and "rice and shine" protein bowls.
In addition, Pok Pok Po will order a range of beers and THC drinks in partnership with 8th Wonder Brewery. They will also have energy drinks, fountain drinks, and a traditional Indian beverage made with fresh mangoes, yogurt, water and sugar called Mango Lassi.
