Owned by Will and Nichole Buckman, the new location will be 26608 Keith Street in the Old Town Spring shopping district, at the former location of Hyde’s Café. The Woodlands location of CorkScrew BBQ will close Aug. 1, and the new location in Old Town Spring will open sometime in September.
“We like Old Town Spring,” Nichole said. “We grew up in Spring and graduated from Spring High School, so it’s pretty much our hometown. We want to bring some life back to Old Town Spring and attract people from out of town. It’s a win-win for everyone.”
Since CorkScrew BBQ’s inception, the outdoor venue remains open until they sell out of meat each day. Due to the barbecue joint’s popularity, customers can also preorder whole meats online three to five days in advance to avoid missing out on their favorites that often quickly sell out.
“Over the last three years, it’s gotten busier,” Nichole said. “We are always looking to better ourselves with everything we do and make sure we have the right people working for us and, so far, that [business model] is working.”
The decision to relocate the restaurant came from the couple’s desire to own their own facility rather than leasing.
The new venue will offer seating for about 50-60 customers outside and another 40-50 seats inside, allowing the restaurant to stay open regardless of weather conditions.
In addition to their current lunch hours on Tuesdays through Thursdays, CorkScrew BBQ will also be open Sundays for lunch and Friday and Saturday nights with live music. The restaurant may also expand their online preorders to include orders which can be placed 24-48 hours in advance, Nicole said.
“We wanted something that fit us really well, and Old Town Spring is rustic, like us, and gives us the yard we want,” Nichole said. “The Woodlands isn’t feasible. The Woodlands is mostly strip centers, and we [would] have to have a standalone building that will cost us a million dollars, and we can't afford that. We don't want to tank our business trying to afford something we can't to stay three miles closer"
In addition to traditional barbecue selections such as prime beef brisket, link sausage and pork spare ribs, the restaurant serves signature dishes like the “Pancho and Lefty” and “The Whole Hog.” CorkScrew BBQ also offers a variety of homemade sides of potato salad, coleslaw, mac ‘n’ cheese and baked beans, as well as fresh cobbler.
