Richardson City Council approved a special permit for a drive-thru only restaurant off of East Belt Line Road during a Dec. 12 City Council meeting.

Seven Brew Coffee will be located at 1230 E. Belt Line Road, on the south side of Belt Line Road, west of Plano Road. Seven Brew will be developed on the lot of the former 3,838-square-foot building that was previously occupied by the Velvet Snout, a dog daycare and boarding facility. The Velvet Snout relocated in 2020 after first opening in 2006.

Seven Brew franchise owner Scott Wilson said he is excited for the opportunity to open the new location because Richardson was one of the top markets the company was looking to enter.

“We're excited to develop something that has unlimited potential and can be a great part of the community,” Wilson said at the meeting. “Our entire focus is community engagement and we're ready to hire about 50-55 young adults.”

Seven Brew offers a variety of iced and hot drinks, including coffee, shakes, smoothies and teas. The business has 38 locations across the nation, with four in Texas.

According to city officials, the 660-square-foot coffee shop will not provide interior seating or a walkup window for service. The facility will be able to accommodate up to 13 vehicles at a time in the drive-thru, while an additional five vehicles can be accommodated outside of the drive-thru lanes.

In addition, a canopy will be constructed and cover a portion of the drive-thru lanes on the east side of the building as well as an employee only seating area on the west side of the building.

There are no menu boards for the restaurant, with employees instead stationed in the drive-thru lanes to take orders and assist in directing traffic. The applicant has stated there are eight to 10 employees per shift, depending on the time of day.
