Richards has worked in restaurants since he was 16 years old, adding that he attended New England Culinary Institute in Vermont before traveling through the East Coast. Richards, who is originally from Richardson, returned to North Texas to be with his wife, who was finishing her master's degree.
Richards said he and his wife ended up staying in Texas, where he began working in several fine dining restaurants in the area and eventually learned how to cater.
Since opening Two Skillets, Richards said the business is thriving.
“I think 2024 is going to be the year we pretty much bust out and really be able to service the community,” Richards said.
What’s on the menu?
Two Skillet has several sample menus on the company’s website, but Richards said he can cater to most types of food as long as he is given time to prep.
Meals at catered events will include an entree served with salad, a vegetable side, a starch side and bread. Entree examples include Jamaican jerk seared chicken breast served with Texas-style mango salsa, pico de gallo peppers, and pineapple cilantro sauce; and seared beef skirt steak prepared with sauteed mushrooms, onions, adobo sauce and cotija cheese with chimichurri.
In addition, Two Skillets offers a taco bar with several choices, such as beef, grilled steak, shrimp or chicken, but also includes vegetarian options.
Giving back
Outreach in the community is important, Richards said, adding he regularly provides meals at charity events.
In McKinney, Richards said Two Skillets regularly donates around 500 meals per month.
“We don’t publicize that too much,” Richards said.
