The idea for Rustico struck Marty Bryan and his business partner, Alan Mann, as a way of filling a niche.

Area residents used to have to drive to Grapevine or into one of the big cities for a particular type of upscale dining experience, Bryan said. So he and Mann established one in Flower Mound.

The two were no strangers to the restaurant business.

Bryan, the owner of Marty B’s restaurant in Bartonville, had worked with Mann before when they were both executives at Cotton Patch Cafe. In 2019, they teamed up to open Rustico Wood Fired Grill & Wine Bar in Flower Mound.

Rustico was built around a dine-in area that offered an intimate setting designed to feel equal parts modern and rustic, Bryan said.


The restaurant’s menu emphasizes high-quality meat from hormone-free animals that can be paired with a selection of wines.

The meat Rustico serves is cooked over a wood-fired grill, which lends a distinctive flavor to many of the restaurant’s entrees. Similarly, Rustico’s pizzas are baked in a wood-fired oven.

Although the restaurant was built largely around its indoor dine-in area, the outdoor patio has become increasingly popular during the pandemic, Bryan said.

The restaurant had only a few months to establish itself in the community before the coronavirus made its way to the U.S.


Bryan and Mann moved quickly to reach their customers through social media and other channels. Those efforts paid off, keeping customers coming back, Bryan said.
