Function Coffee Co. will be opening this spring, said founder Tony Daussat.
The business’ coffee is roasted locally each week on a low-emission Bellwether roaster with beans sourced from ethical, living-wage farms, Daussat said. The coffee shop will also have small bites and provisions from local artisans.
“We’ve been incredibly intentional about every detail, from how we roast the coffee, to the ingredients, to the furniture we’ve selected and the overall feel of the space,” he said. “From the beginning, our goal has been to create a place where people feel genuinely welcomed—a true gathering place for the community.”
The coffee shop will also serve signature iced drinks, which are made to order and served in a clear can that is filled and sealed right in front of the guest, Daussat said.
