Si Baby-Q offers a range of Tex-Mex-style barbecue options at its new food truck outside The Boring Bodega.
Owner and pitmaster Jonathan Lagos and his team are now serving Tex-Mex-style barbecue at Hyperloop Plaza.

Lagos told Community Impact that officials with The Boring Company reached out to him in May about setting up outside the Boring Bodega, around the time he assumed full ownership of Si Baby-Q.
"When I visited, I felt like it could be a great opportunity to bring something new and fun to the city of Bastrop," he said. "We are excited to be a part of the community here and are thankful that everyone so far has welcomed us with open arms."

Lagos said rotating specials include choices like sweet chili pork belly burnt ends, smashburgers and smoked chicken fajita tacos.

Digging in
Lagos said the two most popular menu items are the pork ribs and macaroni and cheese.
Priced at $30 per pound, with no minimum weight requirement, ribs are smoked for six hours before Lagos glazes them with agave nectar.
Lagos said he leaned into a classic rendition of macaroni and cheese that "hits the nostalgia button" for $5 a serving.
