Husband-and-wife duo Daniel and Adelita Sanchez are now serving Mexican-inspired smash burgers and other comfort food at Bastrop’s Chestnut Grove Food Truck Court. Daniel Sanchez described the menu as American with a Mexican twist—inspired by a fusion of the couple's Mexican roots with an American classic: the hamburger.
Owner Thinh Luu offers manicures, pedicures, nail enhancements, waxing, add-ons and kids’ services.
Menu options at the fast-casual franchise include baked goods such as bagels, cinnamon rolls, cookies and muffins; breakfast and lunch sandwiches; hot and iced coffees; and more.
The East Coast-style sandwich shop offers hot and cold subs made with freshly baked bread and stuffed with meats, cheeses and vegetables. The subs are also drizzled with a blend of red wine vinegar and olive oil.

Amy Martinez will offer manicures and pedicures with acrylics, gels, dips and more from a bus. The mobile nail salon will be stationed in the parking lot of Magic Duo’s Mystery Bins—a discount, treasure-hunt-style shop that she and her daughter Savannah Lundy opened in March.
Originally set to finish construction in November 2025, the 2,750-square-foot facility will offer cosmetic and dermatology services, such as body contouring, dermatopathology, injectables, plastic surgery, spa treatments and more.
Franchise owner Stephen Thomas will offer freshly brewed, customizable milk and fruit teas, as well as the brand’s signature Wow Bubbles—a brown sugar-cooked version of regular boba, which is usually marinated in honey.
The Tex-Mex fast-casual eatery offers menu items such as customizable burritos, tacos, bowls, nachos, salads and more.

Construction is progressing on the childcare center’s first Bastrop County location, a 10,470-square-foot facility near The Grove subdivision. The center will offer childcare and early education programs for children ages 6 weeks to 6 years old.
Work on an 8,000-square-foot convenience store across from Berdoll Pecan Candy & Gift Company is expected to begin Oct. 1 and be completed July 1, 2027. Construction is expected to cost around $1.2 million.
A May 27 state filing reveals plans for a 7,381-square-foot auto parts store on NW Loop 230. Construction on the $890,000 project is projected to start in January 2027 and finish in June 2027.

Closings
Owners Leo and Michelle Gaertner served Italian cuisine with Southern flair. The couple said Leo Gaertner is retiring after 38 years in the restaurant business to focus on family.
Demolition began the week of July 13 on the existing building—which opened in 2001. A new, 3,800-square-foot restaurant will take its place in late December. Operating partner Amy Zamora said the new design will feature upgraded kitchen technology that is intended to make ordering easier and help the location’s 45 employees prepare and deliver orders more efficiently.
