Owner Jay Adams said guests at Big Daddy Jay’s Creole Kitchen can choose seafood or chicken and sausage gumbo, along with red beans and rice, jambalaya, shrimp etouffee, boudin balls, crab cake sliders and shrimp rolls.

In addition to their permanent spot on North Main Street, Adams said he takes his food truck to community events each week, including:
- Trivia night at Meridian, located at 200 Main St. in Buda, on Mondays at 7 p.m.
- Comedy night at Meridian on Tuesdays at 8 p.m.
- Buda Farmers Market, located at 121 North Main St. in Buda, on Saturdays from 9 a.m.-1 p.m.
“Everything's made fresh, from scratch,” Adams said. “I've actually changed a few of my ingredients for it to be gluten-free. My boudin balls will be 100% gluten-free as soon as I get some new bread crumbs because everything [else] I use in it is just meat and rice.”
