Restaurants, a hotel and automotive services make up several of the new businesses that are now open or coming soon to Round Rock.


Besos Cocina & Cantina was scheduled to open at the end of June, after the press deadline for this issue, at 3107 S. I-35, Round Rock. The Mexican restaurant will occupy a building formerly home to the restaurant Tortuga Flats, which closed in 2018.

Embassy Suites by Hilton opened May 3 at 270 Bass Pro Drive, Round Rock. A grand opening was held May 24. Among other amenities, Embassy Suites offers pet-friendly rooms, free Wi-Fi and a business center. 512-308-3883.

Long Island Deli opened May 24 in the former Little Red Wagon building at 1207 E. Palm Valley Blvd., Round Rock. The deli is locally owned and offers bagels, sandwiches, black and white cookies, cheesecake and various sides.


Project Pollo opened April 7 in the University Commons shopping center at 200 University Blvd., Ste. 600, Round Rock. The vegan national chain restaurant offers sandwiches and burgers made with plant-based meat alternatives to beef and chicken; sides, including macaroni and cheese, french fries and loaded potatoes; and desserts, such as cookies and oat milkshakes in various flavors. 512-843-4085.

Red Lotus Asian Grille opened May 28 in the Round Rock Boardwalk shopping center at 2601 S. I-35, Ste. A500, Round Rock. The menu features appetizers, including fried calamari, egg rolls and Vietnamese spring rolls, as well as desserts and children’s options. Strickland Bros. 10 Minute Oil Change opened in mid-May at 2001 S. A.W. Grimes Blvd., Round Rock. M.G. Spanial owns the Round Rock location, and services include drive-thru oil changes, emission checks and inspections, and maintenance of fleet vehicles. 833-787-2767.

Sushi Nini reopened June 1 at 117 Louis Henna Blvd., Ste. 160, Round Rock. The restaurant closed in June 2021 due to a fire, and repairs to the restaurant were recently completed. Sushi Nini is a sushi and sports bar offering a variety of sushi and sashimi. 512-671-6464.

A Tesla service center opened in early March at 3520 Wadley Place, Round Rock. The collision center performs body work and other services for Tesla vehicles, and appointments can be made through the Tesla app. 737-800-5714.

Texas Top Team Jiu Jitsu officially opened June 1 at 602 E. McNeil Road, Ste. 108, Round Rock. Classes at the jiu jitsu school include striking, children’s martial arts and adult Brazilian jiu jitsu. 512-717-3562.

Round Rock’s third Whataburger location opened in early May at 281 University Blvd. The regional burger chain began renovating a building formerly occupied by a Steak N’ Shake in late 2021, adding new signage and adding the company’s signature orange color to the interior. 512-351-3356.

Coming Soon

Next Level Urgent Care will open a new location in August at 3200 Greenlawn Blvd., Ste. 160, Round Rock. Next Level Urgent Care features an online queue, allowing patients to wait for appointments at home instead of in the waiting room.

Representatives of Velvet Taco confirmed a new location is coming to the area soon, but a target opening date or location have not been set. Velvet Taco is a national chain with multiple locations in Texas. The restaurant offers a variety of specialty tacos and margaritas.
