As a first generation Indian-American, owner Major Ajaypal Singh Gil learned how to cook in Punjab, India, where his mother taught him traditional cooking techniques.
After exploring the culinary world through various chef experiences, Gil was inspired to open his own restaurant. A majority of the menu items at AustIndia Bar & Restaurant are influenced by his childhood.
“I always envisioned a fusion of authentic Indian flavors with Texas’ eclectic spirit, and, hence, decided to take the charge and start it myself,” Gil said.Respecting the craft
With warm lighting and Punjabi music filling the space, the restaurant creates a casual dining experience for all occasions.
Customers can find a menu with varying Indian cuisine from naan tacos and curries to tandoori and biryani. The restaurant’s bar serves classic cocktails in addition to some items with an Indian twist, such as the Mango Lassi Rum, which features mango lassi and rum topped with pistachios.“I get to live my dream everyday,” Gil said. “I have this inherent passion for food which I am able to use in my daily routine through this business.”
Gil said he hopes to expand the business with a new location in the future in addition to offering more catering services for corporate events, weddings and festivals.
