The East Austin bar scene has expanded with Parley’s recent opening in the area.

What to know

Founded by Bar Hacienda, Bar Fino and Here Nor There alums, Terance Robson and Jack “Slim” Hogan, the new spot has partnered with Oseyo and Idlewild.

Both from Ireland, Robson and Hogan stated the new business is a love letter to the pubs they grew up going to. The duo is using the bar as a way to bring Irish culture to downtown Austin.

“We grew up in places where the pub wasn’t just where you drank, it was where you gathered,” Robson said. “That energy of catching up with old friends, meeting new ones, and just enjoying good company is exactly what we’re bringing to Parley.”


Behind the name

As stated in a news release, the name “Parley” means “to meet up,” which is what the space will serve to be a spot for in the local community.

During the day, community members can enjoy a coffee bar with espresso and light bites. The bar’s menu includes:
  • Boxty Balls; mashed potato and mozzarella croquettes, parmesan, parsley, kimchi marinara
  • Krab Rangoon; crispy corn cheese and krab wontons, sweet chili sauce
  • Ham and Cheese Toastie; pressed Dubliner cheddar and smoked ham, grain mustard, spicy tomato jam, cornichon
  • Spice Bag; five spice chicken tenders and waffle fries, fermented chili relish, curry mayo (sub cauliflower wings)
  • Gochujang Buffalo Wings; half-dozen wings, carrot, celery, perilla ranch (sub cauliflower wings)
  • Crispy Pork Belly Sliders; sweet chili soy glaze, kimchi fresno slaw, pickled cucumber
  • Snack Plate; gochugaru pimento cheese, cowboy candy (candied jalapenos), Opah's smoked beef sausage, grain mustard, green olives, crackers
At night, the space will turn into a bar featuring signature cocktails, beer, natural wines and non-alcoholic options.

Cocktails include:
  • Golden Brown; milk whiskey, spent coffee, Café Borghetti, clarified citrus and soda
  • Straight In No Kissin’; gin, burnt lemon, pink peppercorn, limoncello, pinot gris and bubbles
  • Slims Americano; vermouth, Barolo, passionfruit and raspberry syrup and Italicus
  • Fish & Chips Martini; gin or vodka, nori, olive oil and saline
  • Ranch Water; butter tequila, clear lime, Salers, padron pepper and spice
  • Miso Smooth; whiskey, miso, lemon, Ceylon tea and cacao
  • Oochi Wally; tequila, wasabi, pistachio, citrus and cucumber
  • Cesar Pleaser; bourbon, apple, grapefruit, snap pea and eucalyptus
  • Parley Punch; tequila, pisco, tamarind, watermelon, milk, mint oil and orange brandy
  • Olive Oil Collins; gin, orange blossom, Italicus, olive oil and soda
  • Finding Memo (Frozen); rum, Guinness, allspice, condensed milk and vanilla gelato
  • Tri Colour Coffee; whiskey, salted coffee liqueur, mente and dulce de leche cream and orange dust
  • Mascarpone Carajililo; mascarpone tequila, Idlewild coffee and Liquor 43
  • Marg Simpson; pineapple infused tequila, mezcal, orange curacao and blue corn salt

The space will host a range of events from golf outings and weekly run club meetings to watch parties and wellness-focused gatherings.

“Hospitality doesn’t have to mean expensive or exclusive,” Hogan said. “Parley is for everyone – industry folks, creatives, neighborhood regulars and anyone else looking for a place to feel at home.”
