A new sushi concept will open behind cocktail bar Papercut this fall.

The details

Chefs Michael Carranza and Danielle Martinez, the team behind Japanese restaurant Tare, will offer late night sushi at Konbini.

Konbini will blend Japanese cuisine with flavors from Texas and Mexico. The menu will rotate based on seasonality and regional flavors.

"Konbini brings coastal Mexican flair to nigiri, served a la carte behind papercut,” Carranza said in a news release.

Daily preview dinners will take place starting July 23 leading up to the concept's official opening this fall.

Some dishes offered during the preview will include:
  • Madai, or red sea bream
  • Maguro zuke, or marinated tuna on rice
  • Kanpachi, or amberjack
  • A5 wagyu, or Japanese beef
Konbini will also offer alcohol to pair with the menu, including a variety of Japanese liquors and cocktails from Papercut.
