MorninGlory, a brunch and specialty coffee restaurant, will be opening at 2121 Lohmans Crossing Road in Lakeway in February or March.

Gabriel Chaparro, co-owner and chef of MorninGlory, said the hope was to open in December, but, due to several delays, they are anticipating early February or early March for an opening date.

Chaparro is an Army veteran who has over 30 years of experience in the restaurant industry. His plan is to use his Argentinian and Italian background to create a unique dining experience for his guests, he said.

Chaparro said he partnered with Texas Coffee Traders to create the perfect Italian-inspired coffee blend for MorninGlory.


“In addition to the coffee, I spent a long time experimenting with and designing the dishes for my restaurant,” he said.

The brunch-style dishes will be based on Italian staples, such as a healthy breakfast version of the Italian dessert panna cotta, but will also have a southern twist, Chaparro said.

Other dishes will include shrimp and grits, savory chicken and waffles, huevos rancheros, a steak and eggs dish, and a quinoa salad.

The restaurant will also include outdoor seating and a Modbar for espresso coffee making, Chaparro said.
