FoliePop's, a French pastry and coffee shop, will open in the Hill Country Galleria in spring 2020 at 13420 Galleria Circle, Ste. A140, Bee Cave. At FoliePop's, guests are invited to be their own chef, choosing from over 512 flavored pastry, croissant or brownie combinations, according to a press release from the Galleria. The family-operated shop was founded by Antoine Chassonnery and Audrey Sigoure, who previously worked in Dubai developing products for Fauchon, a gourmet food and delicatessen company, the release states. “We are a family of culinary enthusiasts, and after many years of working with the best in the industry, we felt ready to share our passion with the community that has proven so welcoming to like-minded businesses and entrepreneurs like us,” Sigoure said in the release. The business does not currently have a phone number. www.foliepops.com
