The Driskill Grill initially opened in 1930 and after nearly a century of service, MML Hospitality has relaunched the historic spot as an American steakhouse, according to a news release. The new concept is spearheaded by April Bloomfield, MML Hospitality’s executive chef since 2025.
The restaurant opened its doors to customers May 18.
The history
The Driskill Hotel has been a historic Austin staple since 1886, housing political figures, musicians and entrepreneurs, according to the hotel’s website. The space has endured several restoration projects, preservation efforts and partnerships, including one with MML in 2025 to bring 1881 Cafe, The Victorian and The Driskill Grill to the hotel.
On the menu
The bar menu features a selection of appetizers and light bites, including marinated olives, house fries, steak tartare, a cheeseburger and shrimp cocktail. Patrons looking to dine in for lunch or dinner can find a variety of seafood, such as oysters, clams and crab. The menu also includes salads, sandwiches, steaks and a selection of sides, including braised peas with mint and Thai style crab fried rice.
The steak options range from 26-ounce bone-in ribeyes, which are dry-aged for 28 days, to 14-ounce New York strip wagyu and 6-ounce tenderloins.

The cocktail list is stacked with a different drink for every letter of the alphabet, beginning with the American Trilogy, a rye and apple brandy old fashioned, and ending with the Zacapa Old Fashioned, which is an aged rum old fashioned.
The features
The grill’s 6,000-square-foot dining room was redesigned by Lambert Maguire Design and now seats 243 guests surrounded by period-inspired design elements, according to the release. The team is composed of Executive Chef Nick Erven, Executive Pastry Chef Harry Flager and General Manager Dylan Falkenburg.
