The Soup Peddler Real Food & Juice Bar will open its fourth Austin location by December.
The restaurant started with owner David Ansel providing bicycle delivery soup service 14 years ago in South Austin. Ansel found success and opened his first brick-and-mortar location in 2010. The new location is slated to open at 4631 Airport Blvd., Ste. 130.
"We're very excited about the Airport [Boulevard] store in particular because we have two south stores and a very, very far north store, and this will kind of close the gap," Ansel said.
The Soup Peddler will continue offering its soups, salads, sandwiches, smoothies, juices and counter service at the new location. Soup stocks and salad dressings are house made, and the smoothies are set apart by their unique ingredients, Ansel said.
"It's very special. There have been a lot of changes to the business over the years," Ansel said. "It's very hard to get fast, healthy and affordable [food] so we feel like we've done the best we can in terms of balancing those."
Ansel ended bicycle delivery service in July to focus more on the brick-and-mortar locations, he said. Patrons can still receive delivery from The Soup Peddler by ordering through Favor. Ansel said all existing locations will remain open.
