A Nebraska-based cookie chain plans to make Cedar Park its first Texas home.

Owner Sunnie Fox plans to open Eileen's Colossal Cookies at the Whitestone Plaza next to Walmart by mid-March.

Fox, a former elementary school teacher, moved last year from Lincoln, Neb., where there were two Eileen's stores. She fell in love with the recipe, she said.

"This has been two years in the making, and everything now is in line," Fox said.

The new cookie stand will sell cookies by the dozen as well as specialized cookie cakes. On average, Fox said Eileen's attracts anywhere from 150–200 customers per day. She takes over the former Krispy Kreme Doughnuts location, a 1,600-square-foot retail space where construction is under way. Eileen's will most likely begin with five employees, Fox said.
