For years, Canyon Grille in Lakeway has been a favorite dining destination on Lake Travis. 

Atop a hill with lake access through the Rough Hollow Yacht Club, offering the best sunset views from its patio overlooking the lake, Canyon Grille & Bar is giving guests another reason to visit.

In April, Canyon Grille transformed with a renewed focus on a farm-to-table concept that incorporates Central Texas flavors and culture through local sourcing and partnerships.

According to CEO Tony Curtis-Wellings, the goal is to create an experience that feels uniquely connected to the region through the food while maintaining the atmosphere guests enjoy when they visit.

What’s new at Canyon Grille?

While Canyon Grille remains a casual, family-friendly destination, the restaurant has elevated its culinary program by sourcing more ingredients from Texas producers and focusing on freshness.

“We really wanted the menu to be better reflective of where we live, representing the Texas ranch products that we have access to, the fresh Gulf seafood that we can access and using Central Texas seasonal produce from farms in the area,” Curtis-Wellings said.

Diners can enjoy locally grown crisp living lettuce in the menu’s “The Garden” salads, or take a trip through local ranches, the Gulf or South Texas with its “The Ranch & Gulf” and “South of the Border” entrees such as Heartbrand steak frites and Texas blackened redfish. 

Curtis-Wellings said locally grown ingredients make all the difference; food tastes better when the ingredients are picked and on diners’ plates the next day.

What is the Texas Table Series?

Canyon Grille’s new monthly dining experience, the Texas Table Series, builds on the business’s new farm-to-table foundation.

Launched in September, the chef-inspired program partners with local suppliers to create menus highlighting seasonal ingredients and Texas culinary traditions. Each month, a different theme explores regional flavors while telling the stories behind the ingredients. Executive chef Alex Foreman and sous chef Alex Jenkins curate the limited-time menus, with desserts by Caleb Garcia.

The inaugural Texas Table menu, “Coastal Flavors,” was developed in partnership with Austin-based Quality Seafood. Working alongside owner Carol Huntsberger and her team to identify the freshest Gulf Coast seafood for the time of year, Canyon Grille's chefs created a menu featuring ingredients such as yellowfin tuna and grouper.

“If you come on a regular basis, instead of us changing out the entire menu, we can change out the menu to a smaller, chef-inspired menu every month,” Curtis-Wellings said. “So we really have two menus at the Canyon Grille now.”

The Texas Table Series will run until April, and menus will continue to explore the state's diverse food culture. October will highlight Hill Country German heritage, with dishes like Fredericksburg bratwurst and an apple strudel made with Texas pecans.

The restaurant is also expanding its beverage offerings to complement the evolving food program. New craft cocktails and mocktails are being developed around seasonal menus, also using local ingredients and partnerships with area distilleries and beverage producers.
