Earth Burger, a plant-based fast-food restaurant from San Antonio, will open in San Marcos in summer 2017, owner Mike Behrend said. The vegan and vegetarian eatery will open at 656 E. Hopkins St., the former site of a Church’s Chicken. The San Marcos store will be the company’s second restaurant.
